This is a quickie meal that’s a favorite any time.

1 bag Tostitos Restaurant style chips
1 can refried beans. (I used Rosarita black beans)
1 bunch green onions
1 lb mild cheddar cheese (Tillamook is a favorite)
½ teaspoon cumin
½ teaspoon red pepper
1 pint sour cream
¼ lb sliced black olives
1 lb guacamole
1 tablespoon sliced jalapeño peppers
Salsa. I used Private Selection Salsa Grande black bean and Corn flavored

Preheat oven to 350

Use 2 Pyrex baking dishes
Use a spoon to slather a thick coating of refried beans on each chip.
Place each slathered chip on the baking dish until the dishes are tightly packed.
Sprinkle cumin over the bean coated chips.
Put a generous coat of cheese over the entire topping.
Put the baking dishes in the center rack of the oven.

Bake for between 8 and 14 minutes or until the cheese is bubbling.
Remove from oven

Garnish with green onion, olives, sour cream jalapeños, add red pepper and salsa and serve immediately.

Great recipe with many possible varations. I like the Tostitos "scoops" chips for this kind of nachos. Maybe kind of anal, but they are uniform and you can build individual little bite size snacks.

"Scoops" sound great. I would have never thought to use those. Little individual bites. Can you use the "Scoops" in the oven?, or would you have to use the microwave?

I like the restaurant style Mission tortilla chips because they are thicker and stand up to being heated with a bunch o beans and cheese on top.
