1 can (15oz) black beans, rinsed and drained
1 cup DEL MONTE® SunFresh® Mango, drained and diced (for more mango's use the whole jar)*
1 Roma tomato ( about 1/4 lb), rinsed, cored, and coarsely chopped
1/2 cup each diced orange, yellow and green bell pepper (or all one color)
1/4 cup finely diced red onion
1 Tablespoon minced fresh jalapeño pepper
1 Tablespoon chopped fresh cilantro
1 clove garlic, peeled and minced
2 Tablespoons lime juice
1 tablespoon red wine vinegar
Salt and pepper

In a bowl, mix beans, mango, tomato, bell peppers, onion, jalapeño, cilantro, garlic, lime juice, and vinegar. Add salt and pepper to taste. Serve at room temp or chill in refrigerator to allow flavors to blend. Makes about 4 cups.

Serve the salsa with tortilla chips. Great spooned over grilled fish like halibut or salmon. Is great served with grilled chicken or simply as a salad.

* you can find the jar of mango's usually in the produce section of the supermarket in the refrigerated section with the dressings.
