2 cups sugar
4 eggs
1 15oz can pumpkin (not pie filling)
3/4 cups melted butter, or margarine
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1/2 cup finely chopped walnuts or raisins may be added if desired
Frosting:
3 oz cream cheese
6 Tablespoons butter
1 teaspoon vanilla
1 Tablespoon 1/2 & 1/2 or cream
3 cups sifted powdered sugar
Mix sugar, eggs, pumpkin and butter together. In separate bowl mix flour, baking powder, baking soda, cinnamon and pumpkin pie spice. Add flour mixture to pumpkin mixture slowly ½ cup at a time making sure flour is mixed in before adding next. At this point the nuts, and or raisins can be stirred into mixture. Grease and flour a “sided” cookie sheet. Bake in 325 degree oven for 25 minutes or until done. When cool, frost. Mix all ingredients for frosting at least 8 minutes.
