This cake is named after the calling card of our local heroes, the Elk of Greenwater. The cake is spicy and has lots of character. Plus it is easy to make and tastes wonderful!
Mix in saucepan
1 C. Brown sugar
1 ¼ C. water
1/3 C. shortening
2 C. raisins
½ tsp. nutmeg
2 tsp. cinnamon
½ tsp. cloves
Boil 3 minutes. Cool, then add;
1 tsp. baking soda
½ tsp. salt
2 tsp. water
Mixture will become bubbly and frothy. Stir in-
2 C. sifted flour
1 tsp. baking soda
¼ to ½ C. walnuts
Grease and Flour a 9’ square pan or a 9 x 5 x 3 loaf pan. Bake at 325 ( slow normal oven). Bake time; square-55 minutes, loaf 75 minutes.
